Thursday thoughts

It's hard to concentrate all day when Thursday is your Friday.  Yep, today was the end of my week :)   I have 4 days a row. 

I was so excited you would think I had 4 weeks off instead of days!!  But it has been so busy at work that 4 days a row is like a PARTY!

And the last hour before vacation is always so painful.  I think I counted down each individual minute. 

Yesterday was the first of my fresh vegetable delivery from the farm co-op I joined.  I did it last year and just loved it.  Fresh vegetables, locally grown, organic - perfect.  This weeks delivery was full of lots of salad greens, swiss chard, pea shoots and strawberries.   I ate the strawberries for lunch and tonight made this tasty salad.  I added a little smoked salmon and threw in some blueberries.

It's amazing how much better this tastes than the stuff you get at the grocery store.  I had never had pea shoots before but they were tasty and I am told them are great in a sandwich or wrap.  Maybe tomorrow. 


  1. Kim, glad to read you have a bit of time off, hope you can incorporate some "me time." Nothing tastes as heavenly as local grown fresh fruit and vegetables, thank goodness it is strawberry season. The salad looks delicious. Hope the sun shines for you, enjoy! Julie.

    I know it has to be a relief to get awa from the office and have time to relax and enjoy.

  7. I'm on a mini 4 day off too! I wish my fridge had all those fresh veggies though. Enjoy your weekend. We're cooking in the heat here but family is arriving tomorrow and hopefully the temps will cool down just a bit. Enjoy!

  8. Four days off!! Good for you. Your salad looks very tempting. I have been eating a ton of swiss chard. It looks really pretty growing in the garden too.

  11. My bestie in Washington belongs to a group like that at her local farmer's market. When I visited it was wonderful to pick up the beautiful fresh produce, and even better to go home and eat it! You're right - it tastes so much better than the grocery store.

  12. Did someone say smoked salmon???!!! Oh my YUMMMM!!! I LOVE salmon....and smoked, better yet!! Salad looks positively delish.... 'cept for the blueberries. Don't get me wrong - I love blueberries, but not with my greens. (Hmmmmm....a nice muffin perhaps???) Smiles & Hugs ~ Robin
