Vegging Out

It's only been a week, but I have say I have no regrets about joining the local farm initiative.

I think everybody knows they should eat more vegetables but if you are like me, sometimes you need a nudge.

The veggies I picked up on Wednesday are almost gone.  By tomorrow at this time, they will be.    Not only were they very tasty, but I love the fact that they were certified organic and grown about 25 miles from my house.  I could have bought the exact same things at the grocery store but would never know where they were grown, how far they travelled to get here, or more importantly what was sprayed on them.   The added benefit is that it supports a small local farm run by a lovely young couple.  It's good all the way around.

 So, Operation Healthy Eating is off to a great start.  (Sorry Robin for another guilt trip hehehe).   Friday night after work is generally a take-out night.  But this week I made this yummy stir fry with chicken and a thai peanut sauce.    Can you imagine??  Me - cooking on a friday night??  Its a miracle


Now, if I could only find the same enthusiasm about exercise..........

  1. When you find enthusiasm about exercise...could you send some to me! I actually used to be a gym rat...now, well, it's not really happening! I just bought the next size up in clothes today....waaaaaaa.

  3. My youngest son is a certified personal trainer, ( He does it part time. He is a full time college student). I joined his gym in January, pay every month and have only gone three times. I need more than motivation. I need a bomb under me. Now to the vegetables. I am a huge fan of local farms and will drive miles to buy fresh seasonal produce. L love a good stir fry.

    WE have had thunder and lighting all day and there are 50 fires all around us burning. So weird.
    None close to me but close to my friends.

  9. One step at a time! Maybe once you REALLY enjoy the cooking etc. the exercise will follow :) I need to get myself to the farmer's market this week for some fresh veg!

  11. My daughter and her husband have done this also...they pick up their veggies on Friday from a local farm. If you actually have the vegetables in the house you use them. Your stir fry looks wonderful. But I still won't cook on a Friday night.

  13. Yum! I'm with you on eating local. We've had a CSA subscription for years. One thing we've noticed is that the lettuce (which hasn't been on the road for weeks) stays fresh for so very long. Now, if I could only get my enthusiasm up for cooking...

  14. haha well i am glad your enjoying your veggies! I like all my veggies except Asparagus... sorry but i just do not care for them. Your stir fry looks great!

  16. I would love to be able to do something like your farm initiative, but have never seen anything like that here. When I was in Olympia, WA there was a local farmers market there where you could pick up whatever was picked that week. My friend saved lots of money that way, and everything was organic and FRESH. You and others have inspired me to get myself back on track with very healthy meals.
